Title Case capitalizes the first letter of each word and lower-cases the rest, so "mcDONALD" becomes "Mcdonald". Capitalize Each Word only raises the first letter and leaves the others as typed. Neither applies grammar rules for small words.
Everything is lower-cased, then the first letter of the text and of each sentence (after . ! ? or similar) is capitalized. Names and the word "I" are not recognised, so check the result.
